WHere is a simplified interpretation of a drink from our latest menu. It's a large-volume premix which is loaded full of essence of a festive period, which makes it ideal for your festive gathering. Any leftover cordial to use in morning drinks, sweets, or for more rounds of bikinis.
Bikini
Makes enough for 10 servings
Ingredients for the Clementine Syrup (yields 750ml)
300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g fine sugar
To make the Cocktail (yields 850ml, serving 10)
400ml good quality vodka
100ml classic gin
150ml peach schnapps
200ml clementine syrup (see above)
A few cranberries, for garnish
Mandarin essential oil, for finishing
Directions
Making the Cordial: Place every items into a pan, bring to a gentle boil, mixing until the sugar dissolves. After that, turn off the stove and leave to cool down completely. Decant into an sealable bottle, close it and refrigerate it in the fridge, where it will keep for up to a month.
Preparing the Batch Mix: Pour the specified liquid ingredients in a large bottle, let it rest for an hour, then pass it through , ideally through muslin, so it's perfectly clear.
When ready to serve: Pour 85ml of the cocktail base into a cocktail shaker packed with ice, gently stirring carefully for a minute until cold. Filter into an chilled martini glass or similar, decorate with some cranberries and finish using a quick spritz of the essential oil above the glass.
